In an SFA-licensed food business, who counts as a food handler?
정답A food handler is anyone who handles or prepares food, or who handles utensils and equipment that come into contact with food. This covers cooks, kitchen helpers and service staff who touch food or food-contact items.
Every person who touches food or food-contact surfaces can pass bacteria onto the food, so the same hygiene duties apply to all of them.
- 2
Why can a food handler who looks and feels completely well still be a food-safety risk?
- 1Harmful bacteria can be carried on the skin and in the gut without causing any symptoms
- 2Healthy staff cannot spread bacteria in any way
- 3Only staff with a cough can spread bacteria
- 4Bacteria from handlers only survive on raw meat
정답Harmful bacteria can be carried on the skin and in the gut without causing any symptoms
Some harmful bacteria are carried with no sign of illness, which is why handwashing and hygiene rules apply on every shift, not only when someone feels unwell.
- 3
Name four key moments when a food handler must wash the hands.
정답Hands must be washed before starting work, after using the toilet, after handling raw food, and after touching the face, hair or nose. They must also be washed after handling waste, after cleaning, and after every break.
Each of these moments either removes soil picked up from a dirty source or resets hands that have been re-contaminated, breaking the route bacteria take to reach food.
- 4
Which of the following is NOT part of proper handwashing?
- 1Working up a lather over all surfaces, including between the fingers and thumbs
- 2Rinsing thoroughly under running water
- 3Drying the hands, ideally with paper towels
- 4A quick rinse under water for a few seconds
정답A quick rinse under water for a few seconds
A quick rinse leaves grease and bacteria on the skin, whereas soap, a full lather over every surface, rinsing and drying actually remove them.
- 5
Washing the hands without soap is acceptable when the hands look clean.
- 1True
- 2False
정답False
Visually clean hands can still carry invisible bacteria and natural oils that only soap and lathering remove effectively.
